Chicken soup with vermicelli and potatoes


Carrots: 1 piece (peeled and cut into small cubes)

Potato: 1 piece (medium size / peeled and chopped small cubes)

Chicken breast: 2 breasts (cut into small cubes)

Water: 4 cups

Chicken broth: cube

Onion: 1 piece (small size / finely chopped)

Noodles: half a cup

Parsley: 1 tablespoon (fresh and chopped / for garnish)

Salt: half a teaspoon

Black pepper: a quarter of a teaspoon

Vegetable oil: 2 tablespoons

How to prepare

1. Heat the oil in a thick, wide saucepan over a medium heat.

2. Add the chicken and stir-fry for 3 minutes, until browned a little.

3. Add the onions and chicken broth cube and stir for 2 minutes, until the onions soften.

4. Add chopped carrots and chopped potatoes, and stir-fry for 5 minutes.

5. Season with salt and pepper, then add the vermicelli and broth and bring the mixture to a boil.

6. Reduce the heat, cover the pot and leave for 30 minutes, until the chicken, carrots, potatoes and vermicelli are cooked.

7. You can add more water or broth as needed.

8. Pour the soup into plates and serve hot.
