Grilled vegetables with chicken for diabetics


Chicken breast: 4

Olive oil: 2 tablespoons

Onion: 1 piece

Garlic: cloves

Carrots: 2 tablets

Mushrooms: 6 pieces

Colored pepper: 2 pcs

Parsley: a cup (chopped)

Fennel: 1 piece (chopped)

Salt: a teaspoon

Black pepper: pinch (ground)

Dried thyme: pinch (ground)

Lemon juice: 2 tablespoons

Pomegranate molasses: a teaspoon

Mustard: a teaspoon

How to prepare

Cut the chicken breasts into large cubes, and cut the vegetables into thin slices.

Heat a tablespoon of oil in a deep frying pan on the stove, add garlic, onions, and saute for 3 minutes, then add chicken cubes and stir well.

Add mustard, pomegranate molasses, and continue stirring for several minutes.

In another pan on the fire, put the remaining tablespoon of oil, add the carrots, fennel, zucchini, colored peppers, mushrooms, and stir the ingredients for several minutes.

Add the vegetables to the chicken in the pan, then stir the ingredients for 5 minutes.

Put the chicken and vegetables in an oven tray, then put them in the oven until browned, then serve hot.
