Harissa is a symbol that accompanies the commemoration of Ashura... How to prepare?

We offer you a way to prepare harissa with meat or chicken in a favorite and easy way

Ingredients:


3 cups of hulled wheat


One and a half kilograms of lamb with its bones


Seasoning (to taste)


Salt (to taste)


3 sticks of cinnamon


- a soft sprinkle of cinnamon

How to prepare


The meat is washed with its bones and boiled in a large pot on the fire after it has been filled with water.


Check the peeled wheat, clean it of sediments, and then wash it well.


Add the wheat over the meat and boil over medium heat.

Cinnamon sticks are added to the mixture, then covered the pot and left to boil over a low heat for about eight hours, which contributes to the cohesion between the wheat and the meat.

 

The aforementioned process is done at night and the mixture is boiled until the early hours of the morning, thus preparing according to the principles.

 

Add salt and pepper to the mixture and stir for about five minutes (you can add free spices as desired as well).

 

If the mixture sticks to a large degree, it can be loosened with water.

 

Pour the harissa into a dark bowl and serve, sprinkled with fine cinnamon.
