How does fried foods affect blood sugar?

The faster a food is digested, the faster blood glucose levels rise. The pancreas produces more insulin, which leads to a cycle of high and low blood sugar that leads to insulin resistance, a precursor to diabetes. When it comes to fried foods, there are two factors that influence: carbohydrates and fats.

Fried foods usually contain simple carbohydrates, which raise the glucose level quickly, while the fats slow down the digestion process, rather than an immediate rise in sugar, the rise occurs after a few hours. 

This means that fried foods affect blood sugar levels differently, depending on the type of fried food. For example, French fries raise blood sugar faster than fried chicken, especially if the chicken is not covered in breadcrumbs because chicken is protein and potatoes contain carbohydrates.

Carbohydrates and proteins contain 4 calories per gram, while fats have 9 calories per gram. For example, 56 grams of grilled, skinless chicken breast contains less than 150 calories and 3 grams of fat. While the same weight of fried chicken breast contains more than 200 calories and 12 grams of fat.

Eating high-calorie foods causes weight gain, which affects the body's ability to use insulin. Therefore, care should be taken not to exceed the moderate limit in fried foods.

Trans fats

Fried foods contain trans fats, which are linked to higher cholesterol levels and an increased risk of cardiovascular disease. Therefore, it is advisable to choose healthy fats when choosing frying oil.
